Pale lemon in colour.Elegant with notes of yellow apple, pear and lemon custard with a background of biscuit and brioche. Very well balanced with flavours that mirror the nose with crisp acidity, creamy mousse and a long pastry finish. Champagne makes for the most sophisticated aperitif but it can also be paired well with oysters, fritters, tempura, Ibérico ham, sushi and white truffle. Buttery cheeses are such as Camembert, Brie, Morbier or Chaorce will work incredibly well.
